Ingredients

  • 100g unsalted butter, plus extra for the tin
  • 100g golden syrup
  • 250g crunchy peanut butter
  • 200g rolled oats
  • 50g mixed seeds
  • 75g Khalas dates, pitted and chopped

Directions

Prepare and bake

  1. Preheat oven to 180°C / fan 160°C / gas 4.
  2. Butter and line a 20cm square baking tin.
  3. In a small pan, melt together:
    Butter
    Golden syrup
    200g peanut butter
 Stir until smooth and combined.
  4. In a large bowl, mix:
    Melted mixture
    Oats
    Seeds
    Chopped dates
  5. Pour into tin, smooth the top with a spatula.
  6. Bake for 20–25 minutes, until golden on top.

Finish and serve

  1. Mix remaining 50g peanut butter with 2–3 tbsp hot water to make a drizzle.
  2. Cool flapjacks for 5 minutes in the tin.
  3. Drizzle with peanut butter, then cut into 12 rectangles.
  4. Let cool completely before serving.

One-pot Chicken with Dates

Ingredients

  • Whole chicken 1.8kg or chicken thighs or legs 1.25kg
  • 4 tbsp olive oil
  • 1 lemon cut into thick rounds, pips removed
  • 2 echalion shallots halved lengthways
  • 4-6 Khalas dates pitted
  • 4 thyme or oregano sprigs plus extra to serve
  • Ground urfa chilli 2 tbsp or dried chilli flakes 1 tsp

Directions

Sear the chicken

  1. Preheat oven to 220°C / fan 200°C / gas 7.
  2. Season chicken all over.
  3. Heat 2 tbsp olive oil in a large casserole over medium-high heat.
  4. Place chicken breast-side up (or skin-side down if using thighs/legs).
  5. Press gently to sear skin evenly; cook 5–8 minutes without moving.

Add aromatics

  1. Add lemon slices and shallots to the pan.
  2. Let sizzle for 2 minutes, making sure lemons contact the pan base.

Add dates and herbs

  1. Add dates, herbs, and 250ml water.
  2. Sprinkle chilli on top of the chicken.
  3. Cover and roast for 20–25 minutes, until chicken is mostly cooked, dates are plump, and lemons are jammy.

Finish roasting

  1. Uncover and drizzle chicken with remaining 2 tbsp olive oil.
  2. Roast uncovered for another 20–30 minutes, until liquid reduces by half and chicken is golden.

Rest and serve

  1. Let chicken rest 10 minutes in the pan.
  2. Carve and serve with shallots, lemon, and dates.
  3. Garnish with fresh thyme and flaky salt.

Donut

  • 1 cup flour
  • 2 tbsp cocoa powder
  • 1 tsp baking powder 
  • 1/2 cup date syrup 
  • 1 egg
  • 2 tbsp oil 
  • 1/2 cup milk 
  • Drops of red food colouring

Icing

  • 1/4 cream cheese
  • 1/2 cup powdered sugar
  • 2-3 tbsp milk 

Directions

  1. Preheat oven to 375ºF
  2. Combine together the flour, cocoa powder, baking powder
  3. Add in the date syrup, egg, oil, and milk. Mix to combine 
  4. Add in a few drops of food colouring 
  5. Mix well until fully incorporated
  6. Pour batter into a greased donut pan
  7. Bake for 12-15 min  
  8. While you let the donuts cool, create the icing
  9. Using an electric mixer, beat together cream cheese, powdered sugar and milk
  10. Dip the donuts in the icing and enjoy!

Ingredients

Pudding

  • 280g / 9 oz pitted dates, roughly chopped
  • 1 tsp baking soda / bi carb soda
  • 1 cup boiling water
  • 1/4 cup brown sugar, loosely packed
  • 80g / 6 tbsp unsalted butter, softened
  • 2 eggs, at room temperature
  • 1 1/4 cups plain flour (all purpose flour)
  • 1 1/2 tsp baking powder

Icing

  • 1 cup brown sugar, tightly packed
  • 1 1/2 cups thickened cream (heavy cream)
  • 1/2 tsp vanilla extract
  • 70g / 5 tbsp unsalted butter

Serving

  • Ice cream or dolloping cream

Directions

  1. Preheat oven to 180°C/350°F (160°C fan-forced).
  2. Grease 7 pudding moulds with butter or grease and line a 20 cm / 8″ square cake pan with overhang.

Mashed Dates

  1. Place dates in a bowl, sprinkle over baking soda. Pour over boiling water. Stand 10 minutes, then mash well with a potato masher (or fork) until it resembles sloppy porridge (see video for texture / thickness).

Batter

  1. Place butter and sugar in a bowl. Beat until combined and smooth.
  2. Add eggs, beat until incorporated.
  3. Add flour then sprinkle baking powder across the surface. Mix until flour is incorporated.
  4. Add dates, mix quickly until dates are well incorporated into the batter.

One Pudding

  1. Pour into cake pan, smooth surface. Bake 35 minutes or until skewer inserted into the centre comes out clean.
  2. While still hot, poke about 40 holes all over the surface using a skewer. Pour over 1/2 cup Butterscotch Sauce, leave to soak for 10 minutes.
  3. Use overhang to lift cake out. Cut, serve warm with remaining warm sauce and ice cream or cream.

Baking Individual Puddings

  1. Pour batter into pudding moulds, only fill 2/3 of the way up.
  2. Bake for 25 minutes, or until skewer inserted into the centre comes out clean.
  3. While still hot, poke about 10 holes on the surface of the pudding. Spoon over 1 tbsp of Butterscotch Sauce per Pudding. Leave to soak 10 minutes.
  4. Turn pudding moulds upside down on serving plate. Serve warm with remaining warm sauce and ice cream or cream.

Butterschotch Sauce

  1. Place ingredients in a saucepan over medium heat. Once butter is melted, stir, then bring to simmer.
  2. Simmer for 2 minutes, stirring once, then remove from heat. Serve warm.

Ingredients

Loaf

  • 250g dates pitted and chopped
  • 200ml milk
  • 1 tsp vanilla extract
  • 1 tsp bicarbonate of soda
  • 100g unsalted butter, softened, plus extra for the tin
  • 150g soft light brown sugar
  • 3 eggs
  • 250g plain flour, sifted
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 3 balls stem ginger in syrup

Icing

  • 150g icing sugar, sifted
  • 1 ball stem ginger in syrup, chopped, plus 2 tbsp syrup from the jar

Directions

Prep the dates

  1. Preheat oven to 180°C (fan 160°C) / gas 4.
  2. Line a 900g loaf tin with baking paper.
  3. Set aside 2 tbsp of chopped dates for topping.
  4. In a pan, combine remaining dates with milk and bring to a boil.
  5. Remove from heat, stir in vanilla and bicarbonate of soda. Let cool.

Make the batter

  1. Preheat oven to 180°C (fan 160°C) / gas 4.
  2. Line a 900g loaf tin with baking paper.
  3. Set aside 2 tbsp of chopped dates for topping.
  4. In a pan, combine remaining dates with milk and bring to a boil.

  4. Top with reserved chopped dates and extra chopped stem ginger.

Fudge

  • 1 ½ cups Khalas Dates⁠
  • 1 5.4oz Can of coconut cream⁠
  • 1 8.8oz bag of unsweetened
  • 100% dark chocolate (vegan)⁠
  • Pinch of salt⁠ ⁠

Caramel

  • ¼ Cup date syrup⁠
  • ¼ Cup raw cashew butter⁠ 

Directions

  1. Combine the Khalas dates and coconut cream together in a sauce pan and cook until the dates have broken down, and the mixture is golden brown.
  2. Remove from heat and blend until smooth.⁠ Melt the chocolate with a double boiler (you can use a metal bowl on a pot of boiling water).⁠
  3. Combine chocolate and date mixture to make the fudge and set aside.⁠
  4. Make the caramel by simply combining date syrup and raw cashew butter.⁠
  5. Press the fudge into a lined pan and top with caramel, pretzels and salt.
  6. Place in the fridge or freezer for about 15 minutes, serve and enjoy⁠ ⁠

Ingredients

Meatballs

  • 1 Tbsp. ground cumin
  • 2 tsp. paprika
  • 1 tsp. kosher salt
  • 1/4 tsp. cayenne pepper
  • 1 pound ground lamb
  • 1/4 cup very finely chopped onion
  • 2 tsp. minced garlic
  • 2 Tbsp. olive oil

Caserole

  • 1 1/2 cups long-grain rice, preferably basmati
  • 3/4 cup red bell pepper cut into strips, 1/4-inch wide and 1 1/2-inch long
  • 8 Khalas dates, pitted and cut lengthwise into quarters
  • 3 1/2 cups reduced-sodium chicken broth
  • 1/4 tsp. saffron threads, crushed
  • Kosher salt
  • 3 Tbsp. julienned, fresh flat-leaf parsley
  • 3 Tbsp. julienned, fresh mint
  • 2 tsp. julienned lemon zest

Directions

  1. Preheat oven to 375°F (190°C). Oil a 2½-quart baking dish.
  2. In a bowl, mix cumin, paprika, salt, and cayenne.
  3. Add lamb, onion, garlic; mix well with forks.
  4. Roll into ~24 small meatballs (1 Tbsp each). Can be made 1 day ahead.
  5. Heat olive oil in a frying pan over medium-high heat.
  6. Brown meatballs on all sides (2–3 min). Set aside.
  7. Spread rice evenly in baking dish.
  8. Scatter bell pepper and dates over rice.
  9. Heat chicken broth until simmering; add saffron and salt to taste.
  10. Pour hot broth over rice. Cover tightly with foil.
  11. Bake ~20 min, until rice is tender and liquid mostly absorbed.
  12. Remove foil, stir in browned meatballs.
  13. Re-cover and bake 5 more min. Remove from oven.
  14. Mix parsley, mint, and lemon zest; sprinkle over casserole before serving.

Ingredients

  • Feta cheese – 1 block (about 200g), preferably Greek-style
  • Dried Khalas dates – 6–8, pitted and halved
  • Salted pistachios – 2–3 tablespoons, roughly chopped
  • Chili flakes (red pepper flakes) – ½ teaspoon, or to taste
  • Extra virgin olive oil – 1 tablespoon
  • Liquid honey – 1 tablespoon, for drizzling
  • Fresh thyme leaves – 1 teaspoon, or substitute with ½ teaspoon minced fresh rosemary

Directions

  1. Preheat the oven to 375F.
  2. Line a small baking dish with parchment paper.
  3. Add the block of feta to the center of the baking dish on the parchment paper.
  4. Drizzle the olive oil over the feta cheese. Sprinkle the chopped dates and pistachios over and around the feta cheese. Add a small or big pinch of chili flakes (depending on your tastes). Then drizzle the honey over top of the whole dish – the feta and everything else in the baking dish.
  5. Bake for 15-18 minutes or until the feta is softened. Serve with crostini, pita chips or your favourite crackers.  To serve, you can keep everything in the baking dish you baked it in and let it cool a bit before serving OR transfer the feta as the centrepiece to a serving dish.

Cupcakes

  • 2 1/2 Gluten Free Baking Flour
  • 1 1/2 tbsp baking powder
  • 1 tsp cinnamon
  • 1/2 lemon, juiced
  • 1/2 tsp kosher salt
  • 1 cup applesauce
  • 1 cup Khalas dates, chopped
  • 1 1/3 sugar
  • 3/4 cup unsalted butter, room temp, I used DF
  • 2 eggs
  • ]1 tbsp vanilla extract

Frosting

  • 3 sticks of butter, room temp, I used a dairy free
  • 5 cups of powdered sugar
  • 1 tsp cinnamon
  • dash of allspice
  • 1/8 cup of dairy free milk
  • 2 tsp vanilla extract

Directions

  1. Preheat the oven to 375 degrees and prepare muffin pan (16 muffins) by lightly spraying with baking spray.
  2. In a mixing bowl add the sugar, eggs and butter and mix for 3 minutes.
  3. Add the rest of the ingredients until just incorporated, then divide the batter into the muffin pan.
  4. Bake for 25-30 minutes or until a toothpick comes out clean.
  5. Allow to cool completely.
  6. Make your frosting by combing all the ingredients together and mixing with electric beater.
  7. Pipe the frosting onto cooled cupcakes.
